Summer is finally here, although it has been pretty much non stop rain here in New York. With nothing but clear skies and sunshine in the forecast for the weekend, I thought it would be a perfect time to fire up the grill for an easy summer dinner. I decided to make a beer marinated chicken and headed to Price Chopper to pick up the ingredients, but also for inspiration. Their beer aisle is extensive! It was fun to browse all of the different flavors and types of beer.
I chose the Leinenkugel’s Shandy Sampler. I was inspired by the Summer Shandy and the Grapefruit Shandy to make a citrus grilled chicken that I would marinate in the beer. I picked up Tyson Breast Fillets, a fresh lemon and grapefruit and even some BBQ specific fresh herbs.
At home I decided to make a citrus, herb and beer marinade for the Tyson chicken breasts.
For the marinade I first blended:
2 tablespoons of chili powder
2 tablespoons of brown sugar
2 teaspoons of salt
1 teaspoon of fresh lemon zest
4 cloves of garlic
1 cup of butter softened
Then I added two cans of Leinenkugel’s Summer Shandy at room temperature. After whisking it together I placed the chicken breasts in the marinade overnight.
When it was time for dinner the next evening, I took out the BBQ grilling herbs and minced them, and sliced the lemon in half. Half of the lemon I sliced into individual garnishes.
John is the grill master in our household. After he put the chicken on the grill over a medium heat, he sprinkled on a dash of herbs and a splash of fresh lemon juice. He grilled them for about 15 minutes, turning them over half way through. When he turned them, he added herbs and lemon to the other side as well.
They looked incredible, and smelled amazing too!
I love the light glaze the marinade created over the chicken as well.
The marinade turned glaze kept the chicken incredible moist, and the flavor was spectacular! John opened up a can of the Grapefruit Shandy to enjoy with this fresh summer dinner!
We enjoyed the Leinenkugel’s Summer Shandy and Grapefruit Shandy relaxing on our back porch in the cooling summer night we can’t wait to look for it at some of our favorite local places like Fanatics, Mr. G’s Grille or Roark’s Tavern!
